Spicy Creamed Spinach
2 TBSP butter 1 TBSP olive oil 2 cloves garlic, minced 1 medium onion, minced 1 large container of spinach (16 ounces) -- chopped 1 teaspoon red crushed pepper flakes 1/4 teaspoon ground nutmeg 1/8 teaspoon salt 1/8 teaspoon pepper 1/2 jalapeño pepper 1/2 cup heavy cream 1/4 cup freshly grated parmessan cheese
  1. In a deep pot, in medium heat, melt the butter and add the olive oil.
  2. Sauté the onion until soft then add the garlic, jalapeño pepper and red crushed pepper. Saute for few minutes.
  3. Add the chopped spinach. Mix and turn the spinach until all leaves are tender.
  4. Add the rest of the ingredients and mix well. Cook together and let the cream reduce until about half of the cream remains.
  5. OPTIONAL: you can add bits of fresh bacon, ham, or chicken.
